Update GUI architecture diagram in README #1267

I would like to propose to create a new updated diagram for the GUI I believe this will help with documentation going forward! example: (since it was updated almost 5 years and says wip)

I would like to help with creating an updated and more detailed diagram reflecting the current structure of the GUI to improve documentation clarity for new contributors.
Additional context
There are a lot of tools freely available to create this diagram that look very nice, are accurate & can be made quickly.
